Lunchbox Ideas

Today marks the start of a new beginning for me, I going to learn to expand my horizons… that’s with cooking, of course.  For those of you who don’t know me personally, all I can say is the kitchen is NOT my forte.  I do enjoy eating good food but lack the talent (and maybe motivation) to create it myself.  Lucky for me, I’m marrying a man who can cook 🙂  Woohoo!  But for those days when my man chief is not around, I need to learn those basic skills to whip something out of nothing.

For starters, I’m going to experiment with lunchbox ideas. All I really know how to do is the simple sandwich and salad combo.  But really, it gets boring after a while. I mean what else can you make for lunch?  So I turned to the net for some online help. I found some easy to-do lunch and snacks recipes that well help me kick start my cooking career (<—definitely joking).

#1: Mini Tortilla Crust Pizzas

This recipe comes from Dashing Dish.  These baked little goodies are a healthy alternative to pizza. The fact that these are made in a muffin pan is fantastic.  It allows you to change the toppings to cater to everyone’s preferences.

#2: Greek Yogurt Chicken Salad

Moving away from the typical mayo-filled chicken salad, this healthy yogurt substitute sure looks good and not to mention easy to re-create.  You can find this recipe at Tablespoon.

#3: Spinach Balls

of iron?! This next recipe comes from The Kitchen is My Playground.  This quick and easy recipe is one mighty fine way to enjoy spinach.  Create as many you like, this recipe is freezer-friendly (bonus!)

#4: Cheeseburger Cups

A great twist on a cheeseburger.  A little Pilsbury biscuit stuffed with ground beef mixture and topped with cheese, who wouldn’t love to it eat this? Check Cheese-burger.net for the details

 #5: Guacamole Grilled Cheese

Can you say “yum”.  Get this recipe from Cooking Stoned. This sandwich does have an additional recipe for the “best damn guacamole ever”.  Can’t wait to try!

    Thanks for sharing those tips. I was actually thinking about how boring my lunches have been this week (typical sandwiches). I will definitely try these to spice up my lunch life:)

    made the spinach balls for a party and it was a hit! People wanted more and i had to stop what i was doing to make more!!!!
