As a teenager, I used to go through my mom’s magazines and rip out every mouth-watering dessert recipe I came across.
I recall spending a few Sunday afternoons standing in the kitchen holding a mixing bowl and spatula—carefully following the complicated directions for that picture perfect, melt-in-your-mouth, double layered chocolate cake.
The aroma from the oven alone was undeniably delicious. It even had my bratty brothers running into the kitchen dying to try this cake that promised to be heaven on earth.
When I retrieved my glorious cake from the oven, I happily cut a piece for the boys and waited for their positive reactions:
“eww that’s gross”
And just like that my experimental baking days were over.
My family pokes fun at me all time saying I’d rather have a paintbrush in my hand than a mixing spoon. And it’s so true. Some people just excel at different things. As much as I love to eat, I’ve also learned early on that complicated recipes are just not for me.
Now 15 years later—in my own home—I haven’t given up in the kitchen, I just alter the way I do things. I prefer to keep it easy with simple but super-tasty recipes.
Peanut butter has always been a staple item in our kitchen cupboards. We use it in our protein shakes, we used it as a spread on our apple slices and we even use it to create tasty treats.
Today I wanted to share my twist on the classic Peanut Butter Snack Bites with Kraft Peanut Butter with Chocolate.
For me, nothing hits the spot like an incredible sweet and salty treat with just the right amount of crunch to it.
AND there’s nothing I love more than a great tasting recipe that requires no baking!
These chocolate pretzel peanut butter snack bites are so easy to make that even I can’t mess it up.
The best part!
I was so impressed with the turnout that I shared these snack bites with the family. . . I received two thumbs up for this one!
Here’s what you’ll need:
- 1 cup large flaked rolled oats
- ½ cup Kraft Peanut Butter with Chocolate
- ¼ cup honey
- ¼ cup of crushed pretzels
- pinch of sea salt
- optional: melted chocolate
STEP 1: Stir the jar of peanut butter well before using. In a medium bowl, mix together the peanut butter and honey until it’s well blended.
STEP TWO: Stir in the large flaked rolled oats. You should have a texture that isn’t too sticky, but not too dry either.
STEP 3: Take your pretzel sticks and chop into smaller pieces. This is what will give you the crunch in your snack bites. You can alter how chunky or fine you want to make it.
STEP 4: Roll into 1 inch balls, using about 2 tbsp. for each. I made about 20 with this recipe.
STEP 5: For an extra kick of salty and sweet, drizzle some melted chocolate and sprinkle some sea salt on top. For easy clean up, make sure you do this on parchment paper. Chill for 20-30 minutes until firm and enjoy!
